Creamy Tiramisu

easy tiramisu made in the thermomix

Creamy, delicious and unbelievably EASY tiramisu made with coffee soaked sponge fingers and creamy mascarpone.


Ingredients:

  • 2 medium eggs

  • 1 egg yolk from medium egg

  • 130 g caster sugar

  • 500 g mascarpone

  • 300 g sponge finger biscuits

  • 350 g strong brewed coffee chilled

  • 50 g liqueur or brandy (optional)

  • 20 g cocoa powder, unsweetened



Preparation

  1. Brew 350g of strong coffee and add 50g of brandy (optional). Let it cool down

  2. Insert butterfly whisk. Place eggs, egg yolk and sugar in mixing bowl then whip 6 min/speed 4.

  3. Add mascarpone and mix 2 min/speed 3. Remove butterfly whisk.

  4. Briefly soak sponge fingers in chilled coffee until they soak up just enough liquid without falling apart. Arrange half the soaked sponge fingers in the base of a rectangular dish (30 cm x 20 cm x 6 cm). Spread half the mascarpone mixture over sponge finger base. Cover with remaining soaked sponge fingers, and spread remaining mascarpone mixture on top. Cover with cling film and refrigerate for 5 hours.


This dessert is easier made the day beofre as it will have time to cool down perfectly to be served. Dust with cocoa powder just before serving to get that soft chocolate finish.
